Ingredients

  • 2 lbs ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 cups mozzarella cheese shredded - divided
  • 24 oz marinara sauce divided
  • 1 teaspoon dried oregano
  • 1 teaspoon basil dried
  • salt and pepper to taste
  • 3 zucchinis shredded - medium

Instructions

  • Preheat the oven to 375°F (190°C).
  • Grease a 9x13-inch baking dish. Set aside.
  • Cook the ground beef and onion in a skillet over medium heat until the ground beef is browned.
  • Add the garlic.
  • Drain excess fat and return the beef to the skillet.
  • Add half of the marinara sauce and seasonings. Stir well to combine and allow to simmer for about 5 minutes. Remove from heat.
  • Add the zucchini to the meat sauce and stir until combined.
  • Spread half of the zucchini and meat sauce mixture into the prepared casserole dish. Sprinkle it with half of the cheese.
  • Repeat the layers of the meat sauce mixture and cheese.
  • Spread the remaining marinara over the top.
  • Sprinkle the remaining mozzarella cheese evenly over the top of the casserole.
  • Cover with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.
