Ingredients

Crust

  • 2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • ½ cup butter - melted

Filling

  • 2 cups strawberries divided - sliced fresh
  • 16 ounces cream cheese softened
  • 1 cup confectioner’s sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping
  • 2 tablespoons strawberry gelatin mix

Topping

  • 2 cups whipped topping
  • 2 graham crackers
  • 2 teaspoons strawberry gelatin mix
  • 1 tablespoon butter melted

fresh strawberries for garnish - optional

Instructions

Crust

  • Mix the graham cracker crumbs, sugar, and melted butter in a medium bowl until well combined. Press the mixture firmly into the bottom of a 9x9-inch dish to form the crust.
  • Place in the refrigerator to chill while preparing the filling.

Filling Layers

  • Arrange just enough of the sliced strawberries over the graham cracker crust to form a layer. Chop the remaining strawberries and set aside.
  • Beat the cream cheese, confectioner’s sugar, and vanilla extract in a large bowl until smooth and creamy.
  • Fold in the whipped topping.
  • Spread half of the cream cheese mixture evenly over the sliced strawberries.
  • Add the remaining chopped strawberries on top of the cream cheese.
  • Add the strawberry gelatin to the remaining cream cheese mixture, and stir until combined. Spread the strawberry cream cheese over the chopped strawberries.
  • Add the whipped topping on top of the strawberry cream cheese layer.

Topping

  • Combine the graham crackers and strawberry gelatin in a food processor. Pulse until the graham crackers are crumbs. Add the melted butter and pulse again just until blended.
  • Sprinkle the strawberry graham cracker crumbs over the whipped topping,
  • Chill in the refrigerator for at least 4 hours or until set.
  • Before serving, garnish with fresh strawberries if desired. Cut into squares and serve chilled.
