Ingredients

  • 2 cups rice cooked - white or brown
  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 6 cups spinach fresh - chopped
  • 1 cup feta cheese - crumbled
  • 4 eggs beaten
  • 1 cup milk you can use regular or a dairy-free alternative
  • 1 teaspoon dried oregano

salt and pepper to taste

1/2 teaspoon red pepper flakes (optional)

1/2 cup grated Parmesan cheese (optional)

Instructions

  • Preheat the oven to 350°F (175°C).
  • Prepare a 9x13 casserole dish with nonstick cooking spray.
  • Cook the rice if you haven't already done so.
  • Heat the olive oil over medium heat in a large skillet.
  • Add the chopped onion and cook until translucent, then add the minced garlic and cook for another minute or until fragrant.
  • Add the chopped spinach and cook until wilted. Season with salt, pepper, dried oregano, and red pepper flakes if using. Remove from heat and let it cool slightly.
  • Combine the cooked rice, sautéed spinach mixture, crumbled feta cheese, beaten eggs, and milk in a large mixing bowl. Mix well until everything is evenly combined. Adjust seasoning if needed.
  • Pour the mixture into the greased casserole dish, spreading it out evenly. If desired, sprinkle grated Parmesan cheese on top for an extra cheesy crust.
  • Bake for 30-35 minutes or until the edges are golden brown and the center is set.
  • Remove from the oven and let it cool slightly before serving.
