Ingredients

  • 8 ounces honey local preferred
  • 1 cup water optional

Instructions

  • Preheat the smoker to 200 degrees.
  • Transfer the honey to a smoker-safe dish.
  • Place the honey-filled dish along with a bowl of water in the smoker - side-by-side.
  • Allow the honey to smoke for up to 4 hours.
  • Remove and scrap off any ash that is floating on top.
  • Allow the honey to cool completely before transferring it to sterile jars and storing in a cool, dark place.

Notes

You can use any type of pellets you desire. I like to use fruit pellets like applewood since it lends an additional sweetness to the smoky flavor.
The bowl of water in the smoker helps to maintain moisture in the smoker so that the honey doesn’t get too dry and crystalize.
