- 8 ounces bacon cut into ½ inch chunks
- 1 large onion finely chopped (about 2 cups)
- 3 cloves garlic minced
- 1 serrano pepper diced (Jalapeno *optional)
- 15- ounces great northern beans drained and rinsed (1 can) - or you can use pinto beans
- 15- ounces kidney beans drained and rinsed (1 can)
- 15- ounces black beans drained and rinsed (1 can)
- 1/3 cup brown sugar - packed
- 1/4 cup molasses
- 1/4 cup barbecue sauce your favorite
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon dry mustard
- 2 tablespoons apple cider vinegar
*optional - 1/2 cup beer or water, or more as needed
salt and freshly ground black pepper
You can substitute the bacon with leftover beef brisket or pulled pork for a different flavor profile.
