Ingredients

  • 3 pounds beef chuck roast - boneless
  • 7 ounces diced green chiles OPTIONAL
  • 2 tbsp chili powder
  • 1 tsp minced garlic
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp lime juice - or 1 ounce - OPTIONAL

Instructions

  • Coat the cooker insert with a spritz of cooking oil.
  • Add the roast to the insert.
  • Top with the diced green chiles, chili powder, minced garlic, cumin, salt, and pepper.
  • Cover and cook on low for 8-10 hours or on high for 4-5 hours - or until the beef is tender and easily pulled with a fork.
  • Once cooked, pull the meat until you reach the desired shredded consistency.
  • Stir the pulled beef into its juices.
  • Sprinkle with the lime juice and stir again.
  • Serve as desired.

Notes

Rump roast or round roast can also be used.
