pounds
corned beef brisket
with spice packet, 3-4 pounds
1
large onion
cleaned and cut into wedges
1
pound
carrots
peeled and diced
1
pound
yellow potatoes
small, washed and cut in half
water
1
cloves
garlic
minced
2
bay leaves
1
green cabbage
cut into wedges ** see notes
salt and pepper to taste

Instructions
Rinse the corned beef under cold water and pat it dry with paper towels.
Place it in the slow cooker, fat side up.
Add the onion, carrots, and potatoes.
Cover it with water, about 3-4 cups.
Sprinkle in the spice packet, garlic, and bay leaves.
Cover it and cook on low for 5-6 hours.
Add the cabbage and continue cooking for 2 hours.
Remove it from the slow cooker and allow the corned beef to rest for 15 minutes before slicing.
Serve with potatoes, carrots, cabbage, and sauce if desired.
