Ingredients

  • 1 cup brown sugar
  • ½ cup granulated sugar
  • ¾ cup butter room temperature
  • 1 egg
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 1 tbsp red food coloring
  • 2 cups all-purpose flour Bob's Red Mill Organic Baking Flour
  • ¼ cup cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 cups white chocolate chips

Instructions

  • Combine softened butter, brown sugar, and granulated sugar in a mixing bowl, and beat well to combine.
  • Add in the egg, egg yolk, vanilla, and food color - mix well.
  • Slowly beat in the flour, cocoa powder, baking soda, baking powder, and salt - mix until just combined.
  • Fold in half of the white chocolate chips.
  • Cover and chill in the refrigerator overnight.
  • The next day - preheat oven to 350 degrees.
  • Line the baking sheets with parchment paper and roll the dough into balls- placing 1-1/2 inches apart on the prepared sheet.
  • Bake 12-13 minutes.
  • Immediately after removing from the oven, add more white chocolate chips on the tops of the warm cookies before they cool.
  • Transfer to a wire rack to cool and then store in an airtight container.
