These delicious Orange Cupcakes are made with cake mix and orange soda making them perfect for all of the orange creamsicle lovers out there!

Ingredients

Cupcakes

  • 15.25 ounces white cake mix 1 box
  • 1 cup orange soda
  • 3 eggs
  • ¼ cup oil
  • 6 tbsp orange jello mix

Frosting

  • 1 cup butter unsalted - softened
  • 2 tbsp orange jello mix
  • 3 cups confectioner’s sugar
  • 3 tbsp orange soda

Instructions

  • Preheat the oven to 350 degrees.
  • Place paper liners in a standard muffin tin, and set aside.
  • Combine the cake mix, soda, eggs, oil, and jello mix in the bowl of a stand mixer. Mix on low until combined. Then increase the speed to medium and continue to mix for an additional 1-2 minutes until thoroughly combined. Scrape down the sides and beat once more to ensure it is thoroughly mixed.
  • Divide the batter between the prepared tin(s). Fill each liner about ½-⅔ full.
  • Bake for 14-16 minutes or until the edges are golden brown and the center is set.
  • Allow to cool completely before decorating.

Frosting

  • Start by beating the butter and the jello mix together in the mixing bowl using the paddle attachment.
  • Slowly add the confectioner’s sugar and soda. Once the sugar has been incorporated, increase the speed to medium and beat well until light and fluffy. Scrape down the sides and beat again.
  • Transfer the frosting to a piping bag fitted with a large star tip.
  • Once the cupcakes are cool, pipe a swirl of frosting on each cupcake.
  • If desired, cut paper straws into thirds and insert them into the frosting.

Notes

Storage: Cupcakes can be stored in an airtight container in the fridge for up to 3 days.
