Ingredients

Rolls

  • 1 cup warm water 115 degrees is perfect
  • ¾ cup buttermilk - room temperature
  • ½ cup granulated sugar
  • 5 tbsp butter - melted & slightly cooled
  • 3 tbsp dry active yeast
  • ½ tbsp table salt
  • 2 large eggs - room temperature
  • 5 cups all-purpose flour
  • cups whole wheat flour
  • 2 tbsp raw honey
  • 3 tbsp molasses
  • 2 tbsp cocoa powder
  • ¼ cup brown sugar
  • 1 tbsp oats

Additional melted butter & sea salt for topping

Instructions

  • In a large mixer bowl, combine water, buttermilk, sugar, melted butter & yeast, stir and then allow it to sit for approx 15 minutes for yeast to proof. (you know it's ready when it's puffed & frothy)
  • Add in eggs, honey, molasses, cocoa powder, brown sugar, salt & flours & mix together slowly using a dough hook until flour is incorporated.
  • Mix/knead in the mixer for 10 minutes.
  • Once mixed, let the dough rest for 10 minutes.
  • Preheat the oven to 375 degrees and spray a 9x13 glass dish with cooking spray or cooking oil.
  • Knead the dough out on a lightly floured surface for several minutes. Kneading creates gluten which is what makes the rolls fluffy.
  • Form the dough into a ball and then use a knife or a dough scraper to portion the dough into 12 large pieces. (please do not use a rolling pin or a biscuit cutter with this dough)
  • Roll each portion into a smooth ball and place in the prepared baking dish. Brush with melted butter and sprinkle with oats.
  • Bake for 15-20 minutes.
  • Remove and brush them with more melted butter and sprinkle with sea salt.
  • Serve warm.
