Ingredients

  • 2 tbsp olive oil divided
  • 2 sweet potatoes large - peeled and diced
  • 1 lb ground beef
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin

salt and pepper to taste

fresh parsley, chopped (for garnish)

Instructions

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they soften and brown.
  • Remove the potatoes from the skillet and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil.
  • Add the ground beef, cooking until browned, about 8-10 minutes. Drain any excess fat if necessary.
  • Add the bell peppers, diced onion, and minced garlic to the skillet. Cook for another 5 minutes, until the vegetables are tender.
  • Return the cooked sweet potatoes to the skillet.
  • Add the smoked paprika, ground cumin, salt, and pepper. Stir to combine and cook for an additional 5 minutes, allowing the flavors to come together.
  • Garnish with chopped fresh parsley and serve hot.
