Ingredients

  • 16 oz red beans dry
  • 12 oz Andouille sausage sliced
  • 3 celery stalks diced
  • ½ cup yellow onion diced
  • 1 tbsp minced garlic
  • 1 tbsp creole seasoning
  • ½ tsp dried thyme
  • 2 bay leaves
  • 2 tbsp chicken bouillon better than bouillon
  • 4 cups water
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  • Rinse the red beans under running water in a colander for 30 seconds and allow to drain.
  • Add the rinsed red beans, sausage, celery, onion, and garlic to the slow cooker. Toss to combine.
  • Add in the creole seasoning, thyme, salt, pepper, bay leaves and bouillon.
  • Pour over the water and then stir to combine.
  • Cover with the lid and heat on high for 6-8 hours. Stir occasionally.
  • Serve over rice with a garnish of parsley, if desired.

Notes

Storage: Red beans and rice can be stored in an airtight container in the fridge for up to 2 days.
