Ingredients

  • 1 pound ground beef browned
  • 1 small onion diced
  • 19 ounces red enchilada sauce 1 can
  • 10 ounces tomatoes with green chiles drained (1 can)
  • 15.5 ounces black beans rinsed and drained (1 can)
  • 15 ounces corn rinsed and drained (1 can)
  • 1 teaspoon minced garlic
  • 2 tablespoons taco seasoning
  • 16 corn tortillas cut into wedges
  • 2 cups cheddar cheese divided - shredded
  • 1 avocado diced
  • 1 Roma tomatoes diced
  • 3 tablespoons freshly chopped cilantro

Instructions

  • Lightly spray the cooker insert with cooking oil.
  • Add the cooked ground beef, onion, enchilada sauce, tomatoes with green chiles, black beans, corn, garlic, and taco seasoning to the cooker. Stir.
  • Cover and cook on low for 4-6 hours.
  • Fold in the tortillas and 1 cup of the cheese into the mixture and then smooth the top into an even layer.
  • Top with the remaining cheese. Cover and cook for an additional 30 minutes.
  • Serve with diced avocado, tomatoes, and cilantro.
