1 pound ground beef browned 1 small onion diced 19 ounces red enchilada sauce 1 can 10 ounces tomatoes with green chiles drained (1 can) 15.5 ounces black beans rinsed and drained (1 can) 15 ounces corn rinsed and drained (1 can) 1 teaspoon minced garlic 2 tablespoons taco seasoning 16 corn tortillas cut into wedges 2 cups cheddar cheese divided - shredded 1 avocado diced 1 Roma tomatoes diced 3 tablespoons freshly chopped cilantro
Lightly spray the cooker insert with cooking oil.
Add the cooked ground beef, onion, enchilada sauce, tomatoes with green chiles, black beans, corn, garlic, and taco seasoning to the cooker. Stir.
Cover and cook on low for 4-6 hours.
Fold in the tortillas and 1 cup of the cheese into the mixture and then smooth the top into an even layer.
Top with the remaining cheese. Cover and cook for an additional 30 minutes.
Serve with diced avocado, tomatoes, and cilantro.
