Ingredients

  • 4 pounds boneless skinless chicken breast
  • 4 teaspoons Italian seasoning
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 8 ounces sundried tomatoes sliced - in oil - drained
  • ¼ cup olive oil
  • 1 tablespoon minced garlic
  • 1 ½ cups heavy cream
  • cup grated parmesan cheese
  • 2 cups baby spinach coarsely chopped

Instructions

  • Prepare a slow cooker with nonstick cooking spray.
  • Place the chicken breasts into the bottom of the slow cooker.
  • Season the chicken breasts on all sides with the seasonings.
  • Add the sundried tomatoes, drizzle with the olive oil, and top with minced garlic.
  • Pour the heavy cream around the chicken.
  • Cover the slow cooker and cook on low for 6 hours.
  • Remove the chicken with a slotted spoon.
  • Stir in the parmesan cheese until melted.
  • Then, add the spinach and stir until wilted.
  • Serve the chicken over the spinach and sundried tomatoes. Top with additional parmesan cheese, if desired.
