Cinnamon Cookies Recipe
Fall is a favorite time of year because cinnamon smells so good when it's being baked, which is why these Cinnamon Cookies are always a hit!

- 1 cup butter + 3 tbsp - slightly softened but still cool
- ¾ cup brown sugar
- 1 egg
- 3½ cups all-purpose flour
- 1 cup walnuts finely chopped
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ tsp baking powder
Topping
- 1 cup granulated sugar
- 1 tablespoon cinnamon
Preheat the oven to 350 degrees and line two baking trays with parchment paper.
In a stand mixer, using a paddle, beat the butter and brown sugar together. Mix in the egg.
Then mix in the flour, chopped walnuts, vanilla, cinnamon and baking powder.
Once the paddle has pulled in all of the dough, take the dough out and roll it on lightly floured surface. Make sure it’s ¼ inch thick, evenly spread.
Cut out your cookies in the desired shape and place on the prepared baking trays. Repeat with remaining dough.
Bake for 15 - 20 minutes until the edges are a bit golden.
Meanwhile combine your granulated sugar with one tablespoon of cinnamon.
Once your cookies are ready, remove them from the oven. While they are still hot, dredge them in the sugar mixture - coating completely.
Let cool completely before serving.
