Christmas Wreath Charcuterie Board

Equipment

  • Large board (I used a round 17-inch wooden chopping board)
  • Star cookie cutters

Ingredients

  • 7 ounces sliced salami thin sliced light italian dry salami
  • 6 ounce sliced prosciutto del duca cured prosciutto
  • 8 ounces brie cheese round president brie soft-ripened cheese
  • 7 ounces brie cheese wedge president brie cheese
  • 8 ounces pepper jack cheese cut into 1-inch cubes
  • thin sliced cheese cut into smaller squares
  • 12 ounces assorted round crackers toasted variety pack
  • 8.7 ounces rectangular or square crackers toasted sea salt and olive oil flatbreads
  • 2 cups trail mix
  • 10 ounces stuffed manzanilla olives
  • 6 ounces black olives - pitted medium
  • 1 apple cored and sliced
  • mixed berries fresh raspberries, blackberries, blueberries
  • red black, and green grapes
  • 1 cup whole berry cranberry sauce for filling the brie cheese round
  • 1 cup honey for drizzling over cheese
  • fresh sage and rosemary for decorating the wreath

*Note - quantities are approximate depending on the brands you choose. It is all easily customizable depending on your needs.

Instructions

  • Prepare the cheese buy cutting any blocks into 1” cubes, and the slices into smaller squares. You can also use the cookie cutters to cut the cheese into fun shapes, if desired. Use larger cookie cutters to make the star shape in the brie so that you can fill the center with the jam, honey, or sauce.
  • Layer the salami, fan it out and then roll it into large and small roses - holding together with toothpicks.
  • Use the prepared cheese and salami to make the shape of the wreath, incorporating fresh herbs as well. Adjust the ingredients as needed to fit the size of the board you are using.
  • Add the cranberry brie to the board and then add the salami roses on opposite ends.
  • Use the cheese cubes, nuts, olives, and crackers to fill in the empty spaces throughout the wreath, making sure to not add them all in one spot but spreading little pockets of ingredients in multiple areas of the wreath.
  • Unroll the prosciutto, spread them out, and then roll some pieces together or fan it out. Place 2 portions on opposite ends of the board.
  • Continue filling in sparse spaces with various ingredients (cheese, olives, fruit, nuts, crackers), and herbs until all of the spaces are filled.
  • Decorate with star cheese cutouts.
  • Serve with additional cranberry sauce and honey on the side.

Notes

NOTES
This can be made with a variety of meats such as pepperoni, salami, prosciutto, or sliced deli meats such as sliced turkey or sliced chicken.
Try making with these great cheese varieties - sharp cheddar, white cheddar, monterey, colby jack, pepperjack, swiss cheese, blue cheese, mozzarella balls, etc.
For added visual interest use different cracker flavors, shapes, and textures.
ADDITIONAL TIPS
Remember to use a board larger than you think you will need to be sure you don’t run out of room.
Sometimes it can help to sketch it out to get an idea of how you want to arrange the ingredients before you start working.
Any fresh fruit or vegetables you are including should be added to the board right before serving so they stay fresh as long as possible.
