6chicken breasts - boneless, skinless filets
¼cupall-purpose flour
salt and black pepperto taste
2tablespoonsvegetable oil
1tablespoonminced garlic
¾cupwhite wine
29ouncestomatoes1 can - diced - with juice
⅓cupkalamata olivessliced
¼cupparsleyfreshly chopped
Instructions
Pound the chicken breasts until even in thickness.
Stir together the flour, salt, and black pepper in a shallow dish.
Dredge the chicken through the flour, coating both sides and shaking to remove the excess flour. Set aside.
Meanwhile, place a large (12 inches or larger) cast iron skillet over medium-high heat. Add the oil and swirl to coat the bottom of the pan. Add the coated chicken breasts to the skillet and cook without moving them until they are golden on the bottom side. Flip and continue cooking on the second side until the chicken is done. (juices run clear)
Add the garlic to the skillet and heat through.
Add the white wine and tomatoes to the skillet. Bring to a boil, reduce the heat, and cook for about 5 minutes.
