- 1 onion chopped
- 3 cloves garlic minced
- 1 tbsp ginger minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- 1 lb chicken breast diced (450g)
- 1 small pumpkin peeled, seeded, and cubed
- 14 oz coconut milk - 1 can
- 1 cup chicken broth
salt and pepper to taste
fresh parsley or cilantro for garnish (optional)
Notes: Butternut squash can be substituted for the pumpkin when it is not in season.
