Sauce
Combine the mayonnaise, grated Parmesan cheese, lemon juice, Dijon mustard, Worcestershire sauce, anchovy paste (or anchovies), minced garlic, salt, and black pepper in a food processor or blender. Blend until combined.
Slowly drizzle in the olive oil while pulsing until the dressing is emulsified and creamy.
Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice to suit your preference.
Transfer the dressing to a jar or airtight container and refrigerate until ready to use. The dressing can be stored in the refrigerator for up to one week.
Before using, give the dressing a good stir to ensure it's well-mixed.
Sandwiches
Preheat the skillet over medium heat.
Drop 1 tablespoon of butter or olive oil into the skillet and swirl until melted.
Add two ciabatta rolls to the skillet with the insides down.
Cook until the rolls are toasted to a golden brown.
Remove the rolls and repeat with the remaining butter and rolls. Set the prepared rolls aside.
Season the chicken breasts with salt, pepper, and a drizzle of olive oil.
With the same skillet, increase the heat to medium-high.
Cook the chicken breasts in the skillet for about 6-8 minutes per side, or until they are cooked through and reach an internal temperature of 165°F (75°C). Remove from the skillet and let them rest for a few minutes.
Once the chicken has rested, thinly slice it against the grain.
Assemble
Spread a generous amount of Caesar dressing on the bottom half of each ciabatta roll.
Top the dressing with chopped romaine lettuce, followed by sliced grilled chicken.
Sprinkle grated Parmesan cheese over the chicken, then place the top half of the ciabatta roll on top.
Serve immediately.
Notes
Optional: You can also add additional toppings like sliced tomatoes, crispy bacon, or avocado for extra flavor and texture.
