Instructions
Stovetop Method
Heat the olive oil in a large skillet over medium heat.
Season the chicken with salt and black pepper. Add the chicken to the skillet and cook until completely done, about 5-7 minutes.
Remove the chicken and cut into pieces. Then, return the chicken to the skillet.
Add the minced garlic and Italian seasoning, cooking for another minute until fragrant.
Pour the alfredo sauce, chicken broth, and diced tomatoes into the skillet. Bring the mixture to a gentle simmer.
Add the tortellini and cook according to the package instructions, usually about 5-7 minutes, until tender.
Stir in the Parmesan cheese and spinach, cooking until the cheese is melted and the spinach is wilted.
Slow Cooker Method
Prepare the slow cooker with nonstick cooking spray.
Add the chicken to the bottom of the slow cooker and season with garlic, Italian seasoning, salt, and black pepper.
Add the alfredo sauce, chicken broth, and diced tomatoes on top of the chicken.
Cover the slow cooker and cook on low for 4 hours or until the chicken is cooked through. Remove the chicken and cut into bite-sized pieces. Return the chicken to the sauce.
Stir in the Parmesan cheese until melted.
Add the tortellini to the mixture, cover, and continue to cook for about 30 minutes or until the tortellini is tender.
