Ingredients

  • 3 chicken breast - boneless, skinless
  • 1 tbsp olive oil for stove top method only
  • salt and pepper to taste
  • 3 cloves garlic minced
  • 2 teaspoons Italian seasoning blend
  • 22 ounces alfredo sauce - 1 jar
  • 1 cup chicken broth
  • 15 ounces diced tomatoes
  • 19 ounces cheese tortellini frozen in a bag, thawed - you can use any variety of tortellini
  • 1 cup Parmesan cheese freshly grated
  • 2 cups spinach coarsely chopped - fresh
  • salt and pepper to taste

Instructions

Stovetop Method

  • Heat the olive oil in a large skillet over medium heat.
  • Season the chicken with salt and black pepper. Add the chicken to the skillet and cook until completely done, about 5-7 minutes.
  • Remove the chicken and cut into pieces. Then, return the chicken to the skillet.
  • Add the minced garlic and Italian seasoning, cooking for another minute until fragrant.
  • Pour the alfredo sauce, chicken broth, and diced tomatoes into the skillet. Bring the mixture to a gentle simmer.
  • Add the tortellini and cook according to the package instructions, usually about 5-7 minutes, until tender.
  • Stir in the Parmesan cheese and spinach, cooking until the cheese is melted and the spinach is wilted.

Slow Cooker Method

  • Prepare the slow cooker with nonstick cooking spray.
  • Add the chicken to the bottom of the slow cooker and season with garlic, Italian seasoning, salt, and black pepper.
  • Add the alfredo sauce, chicken broth, and diced tomatoes on top of the chicken.
  • Cover the slow cooker and cook on low for 4 hours or until the chicken is cooked through. Remove the chicken and cut into bite-sized pieces. Return the chicken to the sauce.
  • Stir in the Parmesan cheese until melted.
  • Add the tortellini to the mixture, cover, and continue to cook for about 30 minutes or until the tortellini is tender.
  • Before serving, add the spinach and cook just until wilted.
  • Serve with additional parmesan cheese if desired.
