Ingredients

  • 16 oz pasta penne or your choice
  • 12 slices bacon chopped
  • 4 chicken breasts cubed - boneless, skinless
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 4 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese - grated

fresh parsley for garnish (optional)

Instructions

  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Cook the bacon in a large skillet over medium heat until crispy.
  • Remove and set aside on a paper towel-lined plate. Leave approximately 2 tablespoons of bacon fat in the pan.
  • Add the chicken and olive oil to the skillet. Season with salt and pepper. Cook for 6-8 minutes over medium heat until browned and cooked through. Remove the chicken and set aside.
  • Add the garlic to the same skillet and cook for 1 minute until fragrant.
  • Pour in the heavy cream and chicken broth, bringing it to a simmer. Cook for 3-4 minutes until the sauce thickens.
  • Stir the chicken and bacon back into the sauce. Then add the cooked pasta and parmesan cheese. Toss to combine.
  • Garnish with fresh parsley and serve hot.
