Ingredients

  • 4 russet potatoes peeled and diced - medium
  • 1 onion diced - medium
  • 2 cups ham cooked and diced
  • 4 cups chicken broth
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups cheddar cheese - shredded
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika optional

salt and pepper to taste

2 green onions, sliced (for garnish)

Instructions

  • Combine the diced potatoes, onion, and chicken broth in a large pot. Bring to a boil over high heat and then reduce to a simmer, cooking for 10-12 minutes or until potatoes are tender.
  • Melt butter in a saucepan over medium heat.
  • Stir in the flour and cook for 1-2 minutes, stirring constantly.
  • Whisk in the milk, cooking until the mixture thickens.
  • Stir the roux into the pot with the potatoes.
  • Add the ham, garlic powder, and smoked paprika. Simmer for 5 minutes.
  • Stir in shredded cheese until melted and creamy.
  • Serve warm with a garnish of green onions and added cheese.
