Ingredients

  • 16 ounces pasta any shape (1 box - I used mini penne)
  • 2.25 pounds ground beef
  • 1 onion diced
  • 4 cloves garlic minced
  • 15 ounces diced tomatoes
  • 2 cups beef broth
  • 2 cup cheddar cheese shredded - divided
  • ½ cup ketchup
  • ¼ cup mustard

salt and pepper, to taste

Chopped lettuce, for garnish (optional)

Quartered cherry tomatoes, for garnish (optional)

Chopped pickles, for garnish (optional)

Sesame seeds, for garnish (optional)

Instructions

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • Brown the ground beef with the onion over medium heat in a large skillet, breaking it up with a spatula as it cooks.
  • Add the minced garlic to the skillet with the beef and cook for 1 minute.
  • Stir in the diced tomatoes, beef broth, ketchup, and mustard. Season with salt and pepper to taste.
  • Simmer the mixture for 10-15 minutes, until the sauce has thickened slightly.
  • Add the cooked pasta to the skillet and toss to coat it evenly with the sauce.
  • Stir in 1 cup of the shredded cheddar cheese.
  • Sprinkle the remaining cheddar cheese over the top of the pasta and cover the skillet until the cheese is melted.
  • Serve hot, garnished with lettuce, tomatoes, pickles, and sesame seeds if desired.
