Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup butter unsalted - softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cup milk
  • 3.4 oz instant butterscotch pudding mix 1 box

Icing

  • ½ cup confectioner’s sugar
  • 2 tablespoons milk 2-3 tbsp
  • 1/4 teaspoon vanilla extract
  • ¼ cup butterscotch chips - to sprinkle on top

Instructions

  • Preheat the oven to 350 degrees.
  • Grease a 9x5 loaf pan or line with parchment. Set aside.
  • Combine the flour, baking powder, and salt in a medium mixing bowl. Stir - set aside.
  • Combine the butter and eggs in a large mixing bowl. Whisk until combined.
  • Add the sugar and vanilla. Mix well.
  • Whisk in the milk and pudding mix.
  • Beat in the dry ingredients mixture until combined, taking care to not overmix.
  • Transfer to the prepared baking pan. Bake for 45-60 minutes or until the toothpick test returns clean.
  • Allow to cool in the pan completely before adding the glaze.
  • To make the glaze, whisk the confectioner’s sugar with the milk and vanilla until smooth.
  • Drizzle over the top of the cooled cake.
  • Add butterscotch chips if desired.
