- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup granulated sugar
- ½ cup butter unsalted - softened
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅔ cup milk
- 3.4 oz instant butterscotch pudding mix 1 box
Icing
- ½ cup confectioner’s sugar
- 2 tablespoons milk 2-3 tbsp
- 1/4 teaspoon vanilla extract
- ¼ cup butterscotch chips - to sprinkle on top
Preheat the oven to 350 degrees.
Grease a 9x5 loaf pan or line with parchment. Set aside.
Combine the flour, baking powder, and salt in a medium mixing bowl. Stir - set aside.
Combine the butter and eggs in a large mixing bowl. Whisk until combined.
Add the sugar and vanilla. Mix well.
Whisk in the milk and pudding mix.
Beat in the dry ingredients mixture until combined, taking care to not overmix.
Transfer to the prepared baking pan. Bake for 45-60 minutes or until the toothpick test returns clean.
Allow to cool in the pan completely before adding the glaze.
To make the glaze, whisk the confectioner’s sugar with the milk and vanilla until smooth.
Drizzle over the top of the cooled cake.
Add butterscotch chips if desired.
