Instructions
Combine the onion and butter in a small saucepan. Heat over medium-low for several minutes or until the onions are tender.
Add the rice and stir to coat.
Add the chicken stock, bay leaves, salt, and pepper. Stir well.
Cover with a lid and continue to cook for an additional 15-20 minutes or until the rice is tender.
Fluff with a fork and remove the bay leaves before serving.
Notes
Rice can be stored in an airtight container in the fridge for up to 3 days.
