Ingredients

  • 1 lb ground chicken
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 egg large
  • ¼ cup green onions chopped - plus more for serving
  • ½ teaspoon salt
  • ½ teaspoon black pepper freshly ground
  • cup buffalo sauce plus more for serving
  • ½ cup panko bread crumbs

Instructions

  • Preheat the oven to 400 degrees F.
  • In a large bowl mix together chicken, onion powder, garlic powder, egg, green onions, salt, black pepper, buffalo sauce, and bread crumbs.
  • Use your hands to form the meatballs - about the size of golf balls.
  • Arrange them on a greased baking tray and then brush the meatballs with more oil.
  • Bake for 20 -25 minutes.
  • Remove from the oven and drizzle the meatballs with buffalo sauce, gently toss with sauce or just serve the meatballs with buffalo sauce on the side.

Notes

You can store the chicken meatballs in an airtight container for 5 days in the refrigerator or around 4 months in the freezer.
