Beef Roast Sliders

Ingredients

  • 3 lbs beef chuck roast cut into large cubes
  • 1 cup beef broth
  • 1 packet onion soup mix
  • 4 cloves garlic minced
  • 1 tbsp red wine vinegar
  • salt and pepper to taste
  • 12 slider buns
  • 12 slices provolone cheese
  • 1 cup arugula fresh

Instructions

  • Prepare a slow cooker with nonstick cooking spray.
  • Place the roast into the bottom of the slow cooker.
  • Add the broth, onion soup mix, garlic, and red wine vinegar.
  • Cover and cook on low for 6 to 8 hours or until the beef is tender.
  • Remove the beef from the pot and shred/pull it using two forks.
  • Strain the liquid in the cooker to remove the solids.
  • Preheat the oven to 350°F (175°C).
  • Slice the slider buns in half and place them on a baking sheet.
  • Add the shredded beef and a slice of provolone cheese on top of the bottom half of the slider buns.
  • Bake for about 5-7 minutes, or until the cheese is melted.
  • Remove from the oven, add the top half of the buns, and serve warm.
