Ingredients

  • ¾ cup butter melted - unsalted
  • 1 ½ cups brown sugar packed
  • 1 egg - large
  • 1 egg yolk - large
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups bananas about 3 ripe bananas - mashed
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup walnuts chopped - optional
  • ¾ cup white chocolate chips optional

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line a 9x9-inch baking pan with parchment paper.
  • Whisk the melted butter and brown sugar in a mixing bowl until well combined.
  • Add the egg, egg yolk, and vanilla extract, and mix until smooth.
  • Whisk in the mashed bananas until fully incorporated.
  • Stir the flour, baking powder, baking soda, and salt in a small bowl.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chopped walnuts and white chocolate chips if using.
  • Transfer the batter to the prepared baking pan and spread it evenly.
  • Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the blondies to cool in the pan before cutting them into squares and serving.
