Ingredients

  • 1 ½ pounds chicken - cubed
  • 4 cups broccoli florets - 12 ounces fresh or frozen - do not use frozen broccoli cuts
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon coarse kosher salt
  • ¼ teaspoon black pepper
  • 10.5 ounces condensed cheddar soup
  • 1 cup cheddar cheese shredded
  • 1 tablespoon parsley chopped

Instructions

  • Preheat the oven to 400° F.
  • Spray a 1.5-quart baking dish with cooking oil.
  • Add the chicken and broccoli to the greased dish.
  • Top with the dried seasonings.
  • Add half of the cheddar soup. (you can use the whole can if you want it extra cheesy)
  • Cover the dish with foil and bake for 25 minutes.
  • Remove the foil. Add the shredded cheddar cheese.
  • Bake for an additional 10 minutes, uncovered.
  • Garnish with parsley when serving - opt.

Notes

Serve over your favorite pasta or rice.
You can add any other seasonings, mushrooms, bell peppers, or anything you would like to add to the dish.
You can keep leftovers in the fridge for up to 3-4 days.
