Ingredients

  • 2 avocados -ripe
  • 2 slices whole-grain bread
  • 1 tomato medium - thinly sliced
  • 1 tablespoon lemon juice

Salt and pepper to taste

Olive oil, for drizzling

Optional: red pepper flakes, fresh basil, or chopped cilantro for garnish

Instructions

  • Toast the bread slices until golden brown.
  • While the bread is toasting, halve the avocados, remove the pits, and scoop the flesh into a bowl.
