Ingredients

  • 1 lb chicken thighs boneless and skinless
  • cup soy sauce
  • ¼ cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced

Sesame seeds and chopped green onions for garnish (optional)

For a thicker sauce -

  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  • Whisk the soy sauce, honey or maple syrup, rice vinegar, sesame oil, garlic, and ginger in a mixing bowl.
  • Add the chicken to the mixture and let it marinate for 10 minutes.
  • Preheat the air fryer to 400°F (200°C).
  • Transfer the chicken to the air fryer basket or tray. (save the marinade) Make sure it is in a single layer with enough space for airflow in between. You might have to work in batches depending on the size of your fryer.
  • Cook in the air fryer for 18-20 minutes, flipping the chicken halfway through to ensure even cooking.
  • Transfer the remaining marinade to a small saucepan and cook it over medium heat. Bring it to a boil for at least 5 minutes. Whisk while cooking. If the sauce becomes too thick, reduce the heat and whisk in a splash of water.
  • When the chicken is done, transfer it to a large bowl. Pour the sauce over the top and toss to coat.
  • Season with sesame seeds and green onions when serving, if desired.

Notes

If a thicker sauce is desired, mix the cornstarch with water to make a slurry. Slowly whisk the slurry into the simmering sauce, stirring constantly until the sauce thickens, about 1-2 minutes
