Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the air fryer to 350°F.
  • Lightly grease 3 to 4 ramekins or silicone molds with cooking spray. (any air fryer-safe cooking bowl will work)
  • Combine the flour, sugar, baking powder, baking soda, and salt in a medium bowl - whisking to combine.
  • Whisk the buttermilk, egg, melted butter, and vanilla extract in another bowl until smooth.
  • Fold the wet ingredients into the dry ingredients until just combined. Don’t overmix.
  • Fill each of the prepared ramekins with ⅓ to ½ cup of batter - this should fill them about one-fourth of the way.
  • Place the ramekins in the air fryer basket, ensuring they have plenty of space around them.
  • Cook for 8–10 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove and cool for 2-3 minutes before removing from the ramekins.
  • Repeat until all of the batter has been cooked.

Notes

Notes: This recipe made 3 larger pancakes at a time (in the Cuisinart air fryer rack) and 4 smaller pancakes at a time (in a traditional basket-style air fryer.)
