It’s fair to say that I like most cookies I come across. But there are a small handful that I simply can’t turn down. These White Chocolate Macadamia Nut Cookies that are perfectly soft & chewy are at the top of that list.
Some say I am bordering on obsession with these cookies. Seriously, I can’t get enough. I literally have to have someone else close the container and remove it from my sight when these are in the house. I have no willpower.

There’s just something about a nice, thick White Chocolate Macadamia Nut Cookie that calls to me. Then I take a bite and that chewy texture makes me want another bite and then another. Then before I know it I have had 4-5 cookies and the guilt sets in. It’s so bad.

No! That is the best part. I can literally be enjoying these cookies in about 30 minutes after the craving strikes. That’s pretty good if you ask me.
I mean, most thick cookie recipes want at least 2-24 hours of chill time before baking. None of that here. Just mix and bake. YAY!
Can I use white chocolate chunks instead of chocolate chips?
Yes! That would be a fantastic substitution for the white chocolate chips. It would give a more chocolately flavor in each bite. I love that idea!
HOW DO YOU MAKE White Chocolate Macadamia Nut Cookies?
- Preheat oven.
- Cream together butter & sugars.
- Slowly beat in eggs.
- Mix in extracts.
- Add in flour, baking soda, and salt.
- Fold in the macadamia nuts & white chocolate.
- Drop dough by teaspoonfuls onto a parchment lined baking sheet.
- Bake.
- Add additional chocolate chips on top while cookies are still hot.
- Transfer to a wire cooling rack.

White Chocolate Macadamia Nut Cookies
Ingredients
- 1 cup butter softened (2 sticks)
- 3/4 cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 2-1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp table salt
- 1 cup macadamia nuts coarsely chopped
- 1 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees F
- In a large mixer bowl, cream together butter & sugars until smooth.
- Slowly beat in eggs
- Mix in extracts.
- Add in flour, baking soda, and salt, beating well.
- Fold in the macadamia nuts & white chocolate.
- Drop dough by teaspoonfuls onto a parchment lined baking sheet.
- Bake 8-10 minutes, or until golden brown.
- Add additional chocolate chips on top while cookies are still hot
- Transfer to a wire cooling rack after 2-3 minutes & allow to cool to room temperature before transferring to an airtight container.
