– ½ cup unsalted butter – melted and cooled– 1 ¼ cup brown sugar packed– ¾ cup peanut butter creamy– 1 teaspoon vanilla extract– 2 large eggs – room temp– 1 egg yolk – room temp– 1 ¼ cup all-purpose flour sifted– 1 teaspoon baking powder– ¼ teaspoon salt– ½ cup peanuts toasted – chopped or halves + more for garnish– sea salt flakes on top optional
In a separate mixing bowl combine the dry ingredients (flour, baking powder, and salt). Add that mixture to the wet ingredients. Mix on low until everything combines.
