Easy 30 Minute Peanut Butter Blondies

Peanut Butter Blondies are a thick and chewy dessert, packed with peanut butter flavor. They whip up fast and are perfect for back to school season lunch snacks for kids!

Ingredients

– ½ cup unsalted butter – melted and cooled – 1 ¼ cup brown sugar packed – ¾ cup peanut butter creamy – 1 teaspoon vanilla extract – 2 large eggs – room temp – 1 egg yolk – room temp – 1 ¼ cup all-purpose flour sifted – 1 teaspoon baking powder – ¼ teaspoon salt – ½ cup peanuts toasted – chopped or halves + more for garnish – sea salt flakes on top optional

Preheat oven to 350. In a large bowl, beat the butter and sugar on low. Add peanut butter and the eggs one at a time while mixing on low.

In a separate mixing bowl combine the dry ingredients (flour, baking powder, and salt). Add that mixture to the wet ingredients. Mix on low until everything combines.

Fold in the toasted peanuts.

Transfer into an 8 or 9-inch square pan (greased or lined with parchment paper). Top with more peanuts and sea salt flakes if using.

Bake for 30 minutes. The center should still be just slightly soft and giggly.
