Colorful Monster Eyeball Cookies

Monster Eyeball Cookies are a cute and easy treat to serve for Halloween. Easily customizable, perfect for parties, potlucks, and more. These Halloween cookies are fun for the kids and easily enough for kids to make!

Ingredients

– 8 ounces cream cheese – room temperature – ½ cup butter – room temperature – 1 egg – 15.24 ounces white cake mix 1 box – food coloring – in purple, orange, and green – candy eyeballs

Combine the cream cheese, butter, and egg in a large mixer bowl. Beat together until light and fluffy. Add cake mix and stir slowly to combine.

Divide batter into three bowls and add the food coloring to each bowl and mix until the color is uniform throughout. Chill for 30 minutes.

Preheat oven to 350 and roll 2-3 tablespoon-sized portions into balls. Place on baking sheet and bake for 10-12 minutes.

Add the candy eyes to each of the cookies immediately after removing them from the oven before they cool – pressing them in just deep enough so they don’t fall out.

Allow to cool completely before storing in an airtight container.
