One day the hubs came home with 2 watermelons. They were left over from a gathering at one of the stations & no one else wanted them. I immediately thought that there was no way we would get through it all without having to throw some away. I can’t stand wasting food. I was determined to figure out a way to use it all. My mind first goes to freezing & then how I can change that into something cold & tasty. I came up with this Watermelon Lemon Sorbet.
Watermelon Lemon Sorbet
1 cup water
1 1/2 cup sugar
8 cups cubed fresh melon
1/4 cup lemon juice
Place the water & sugar in saucepan over medium heat. Bring to boil & cook until sugar is dissolved & you have your simple syrup. Remove from heat & allow to cool while you cube & prep your melon.
In a blender, mix together the watermelon cubes, lemon juice & your syrup. Blend until smooth. Pour into your ice cream maker & churn for 15-20 minutes. Transfer to an airtight container & freeze for another couple hours. So good!
That is so easy! I bet me kids would l love it.
