How to Store St Patricks Day Cake Mix Cookie Bars
The best way to keep these bars is to either cover the pan tightly and keep it refrigerated OR transfer the bars to an airtight container and keep it refrigerated. I don’t recommend keeping it at room temperature because of the cream cheese in the frosting.

Can this recipe be doubled?
Yes – but you will still need to bake in two separate baking pans that are 9×13 each. You can double the ingredients and then divide between the two pans and then bake them side-by-side.

- instant vanilla pudding – just the powder, don’t make the pudding.
- vegetable oil
- water
- eggs
- green food coloring
Frosting
- cream cheese – the brick, not the whipped variety – room temperature
- butter – room temperature
- pure vanilla extract
- confectioner’s sugar
Decorate
- rainbow sprinkles – jimmies
Can these be made with another flavor of cake mix?
Yes – I like to use white or vanilla because it makes it easy to tint the batter to whatever color I need for the holiday I am making them for. But you can just as easily make these with chocolate cake mix and chocolate pudding for that matter.

How to Make St Patricks Day Cake Mix Cookie Bars
Bars
- Preheat the oven to 350 degrees.
- Grease a 9×13 baking dish. Set aside.
- Combine the cake mix, pudding mix, oil, water and eggs in a large bowl. Mix well to combine.
- Spread the mixture out into the prepared dish.
- Bake 22-26 minutes or until set.
- Cool completely before adding the frosting and sprinkles.
Frosting
- In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese until whipped.
- Add in the butter and beat again until well blended.
- Slowly mix in the vanilla and 1 cup of the confectioner’s sugar until just incorporated.
- Continue adding the sugar, small portions at a time, and mixing until just incorporated.
- Once the sugar is just blended in, increase the speed of the mixer and whip on high for 1-2 minutes to really aerate the frosting and get everything blended well.
- You can then spread the frosting onto a cooled cake or cookies to decorate.

What are the best sprinkles for these cookie bars?
This is important – just because the package says “sprinkles” doesn’t necessarily mean that it is in fact sprinkles.
I see a lot of people using colored sanding sugar that is labeled as sprinkles.
This will not work as well because when that sugar gets wet – like when mixed into a moist dough or when placed in the refrigerator, it will sweat & the color will bleed out.

- ½ cup butter 1 stick – room temperature
- 1½ tsp pure vanilla extract
- 2½ cups confectioner’s sugar
