Spinach Mushroom Filet Mignon in Creamy White Wine Sauce made with the most tender, premium cut of beef loin. A simple dinner that has the WOW factor!
I have to tell you, I sure love making filet mignon. Not only is it a super delicious meal, but it’s crazy easy to make too. I mean, if you are looking for a 30-minute meal that really makes everyone SWOON – this is the one for you. We originally picked up a beef loin at Costco. The hubs grabbed it & didn’t pay much attention to what he was buying. When I looked at the receipt I about had a heart attack. The thing was $100! I tried to actually make him return it because really, who are we to be buying a $100 cut of meat? Well, he decided to research it & found that it’s basically the best cut of beef you can buy & buying it at Costco, even at that price was a steal. It’s basically a giant piece of filet mignon – just before it’s cut into medallions. So we could cook it as a tenderloin, or slice it & have about 10 filet medallions – we chose the latter & made this super amazing dish.

So we could have made it like we usually do in my traditional Garlic Butter Filet Mignon recipe. But for some reason I really wanted to make a creamy white wine sauce with spinach & mushrooms to add to it. So that’s exactly what we did.
Just look at how pretty it is! I almost didn’t want to eat it, then the smell took over & it was all I could do to get this photographed before I was diving on in.

Spinach Mushroom Filet Mignon in Creamy White Wine Sauce
Ingredients
Sauce
- 1/2 cup sliced mushrooms
- 1/2 cup loosely packed fresh spinach
- 2 tbsp butter
- 3/4 cups half & half
- 2 tsp minced garlic
- 1/4 cup white wine
Filet
- 1 beef loin- sliced into 1" thick medallions
- 2-3 tbsp Worcestershire sauce
- seasonings - salt pepper, granulated garlic
- 4-6 tsp Italian Garlic Butter
Instructions
- Take your meat out of the refrigerator & let sit for at least 30 minutes
- Preheat oven to 450 degrees
Prepare sauce
- Combine all ingredients in a medium saucepan & heat over medium heat & bring to a boil
- Continue to cook for about 10 minutes or until mushrooms are softened
Prepare filet
- Unwrap & pat dry - meat will sear better when dry
- Place in a seasoned cast iron skillet close together but not touching
- Add in your Worcestershire sauce & seasonings -except parsley
- Cook on each side approx 3-4 minutes (place & leave it- don't move it, let it sear)
- Once the meat has browned on all sides, drizzle sauce over the top & it's time to move to the oven & cook 7-8 minutes
- Remove & immediately add your garlic butter
- Enjoy!

I’m all in on this recipe! But, I would buy the filets in a package at Costco. They usually run about $38 for 6. Not sure if they’re the same meat, but they do look the same. Thanks for sharing this recipe.
