Sour Watermelon Pops are a quick and easy frozen dessert made with only 4 simple ingredients. They take only a few minutes to prepare for freezing. So delicious.
I don’t know about you- but when it’s summer, we always have fresh watermelon in the house. It’s one of those things that is bought weekly & the family just can’t get enough of it.
Every so often we are also given one or two from various people & then I end up with way more than we can reasonably eat. So I start making it into things that I can freeze – like these Sour Watermelon Pops.
The warm weather only lasts for a few weeks around here in Northern Idaho. Since we probably only have about a month left of Popsicle weather – I am enjoying them while I can.
I just love the flavor combo of watermelon & lime. Do you love watermelon during the summer? It seems like it’s one of those things that always conjures up fond summer memories.
I honestly can’t remember a summer without watermelon. It is a family favorite. So it is only natural that we use it to make other recipes like these pops.

Here are some commonly asked questions
Can I use a different type of fruit?
I have not tried this with another type of fruit. Since the watermelon cubes are quite large, the measurements would be quite different if using something like a berry.
Can I use a sugar substitute?
I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.
Can I omit the sugar?
While I have not given it a try, I have heard that substituting 2 cups of fresh or frozen strawberries into the puree can give these just the right amount of sweetness needed to counter that tart lime juice. I have also heard that using honey works too.
HOW DO YOU MAKE Sour Watermelon Pops?
- Combine water & sugar in a small saucepan and bring to boiling over medium heat. Cook and stir until the sugar has dissolved. Remove from heat & allow to cool completely.
- Combine the watermelon and lime juice in a blender and puree until smooth.
- Pour & press through a mesh strainer to remove any pieces that did not fully incorporate. This can be easily done by placing the strainer over a large pitcher.
- Pour the sugar mixture into the watermelon mixture and stir. Pour into the pop molds.
- Freeze at least 4-6 hours before serving.
How many can this serve?
I was able to get 12 pops in my pop mold. But this will depend on the size of the wells of the pop mold you use and how full you fill them.

Can this recipe be doubled?
You bet and that is a great option for those super hot days or when you are hosting a backyard pool party or BBQ. These are super delicious and go quickly.
