Do you all remember Sno balls? (the Hostess Sno Balls from our childhood) Filled with that white icing and coated in marshmallow cream and bright pink sweetened flaked coconut…yummy snack to eat!
This take on it is a layer of chocolatey rich brownies covered with frosting that is a mixture of fluff and vanilla frosting topped with tinted coconut.

Ingredients Notes
Brownies
- Brownie mix. I use one family-size box of the mix.
- Eggs, oil, and water for brownie mix. Follow the quantity depending on the brand and directions on the back of the box.
Frosting
- Marshmallow fluff or marshmallow creme – they both work but will give a different texture and may differ in price. One jar of marshmallow cream will be enough. If you have the cream, you can beat it with some vanilla extract and powdered sugar and it will make the fluff.
- Vanilla frosting. Use the regular vanilla cake frosting.
- Shredded coconut. (you can use coconut flakes)
- Pink or hot pink food coloring to make the pink coconut. Just a couple of drops will be enough!

- 9×13 baking dish lined with parchment paper and greased with cooking spray
- Mixing bowls
- Optional, food processor to pulse the coconut if it is too bulky for your liking.
How To Make Snoball Brownies
1: Bake The Brownies
- Prepare the brownies according to the instructions on the back of the box. You want to make them per the directions for a 9×13 baking dish. The exact directions will vary depending on the brand of brownies you choose.
- Pour the batter into the prepared pan. Bake for 25-30 minutes or until the toothpick inserted in the center comes out with just a few crumbs or clean. Check the suggested baking time on the brownie mix box.
- Once baked – cool completely before adding the snoball topping.
2: Add The Topping
- Combine the marshmallow fluff and frosting in a medium mixing bowl. Stir together.
- Spread the marshmallow layer over the top of the cooled brownies.
- Combine the coconut and food coloring in a small bowl. Stir until the coconut is tinted pink and the color is evenly distributed throughout. (start with just 2-3 drops and increase as needed)
- Sprinkle coconut over the top of the fluff. Press in gently to help it stick to the topping.
- Remove the brownies from the dish. Cut and serve with a glass of milk.
Storage
These Snoball brownies should be refrigerated. They will keep for 3-4 days in an airtight container.
You can eat them cold or at room temperature.
Substitutions & Variations
- Mini meringue shells make a great topping too, as well as some M&Ms.
- Coconut is usually pink, but you can use ANY color! Or even more than one color, just mix them all in a separate bowl.
- If you want you can make marshmallow buttercream.
- You can use any frosting you like, and still add some vanilla extract for flavoring.
- You can mix in chocolate chips, more cocoa powder, raisins, and chopped nuts into the brownie mix.
- To avoid using brownie mix, here are the ingredients brownies need: unsalted butter, cocoa powder, sugar, 2 eggs, vanilla extract, flour, and chocolate (melted in a small saucepan).
- You can add cornstarch to the coconut + coloring mixture for coloring to stick better, but it is optional.
Tips To Make The Best Snoball Brownies
- Bake with foil or parchment lining the pan for easy removal. Just lift the brownies out.
- If you microwave the marshmallow fluff for 10-15 seconds it will be easier to scoop out of the jar.
- When the brownies are still a bit warm it will be easier to spread marshmallows and pink coconut as the warmth of the brownies will soften them.
- Using a fork makes it easier to color the shredded coconut.
