Are you a s’mores lover? In this house – people can’t get enough. So when I decided to use super buttery, homemade chocolate chip cookies in place of graham crackers to make s’mores – the house went WILD!
Who could blame them. I mean – the cookies alone have everyone raving. But then to make them into a sandwich with silky chocolate, a sprinkle of graham cracker and gooey marshmallow – hello! Eyes are rolling to the back of the head on these!
You know the saying – less is more. But not in this case. MORE IS MORE my friends!
When it comes to dessert – I’m all about the excess. Go big or Go home – you know – all of the sayings that mean you need to forget the diet, don’t even think about counting calories and just go all in.
That’s where these cookie sandwiches come in. They are just about the most sinful thing on the planet and when you are eating one – all your cares can go to the wayside for just those few minutes. Leave the guilt for later and just savor every single bite – because these are INCREDIBLE!

How do I store the S’mores Cookie Sandwiches?
You can store the s’mores cookie sandwiches in the fridge for up to one week. Because of the marshmallow cream, they can make quite the mess when stored at room temperature
Can I eat these warm or cold?
These taste great as soon as they’re made. Since I recommend storing them in the fridge so the marshmallow doesn’t melt everywhere, it’s perfectly okay to eat them cold too!
What if I can’t find chocolate spread?
No worries! If you can’t find chocolate spread at your local grocery store, just melt about ¾ cup of chocolate chips. Put the chocolate chips in a microwave-safe bowl and heat at 10-15 second intervals, pausing to stir the chocolate, until it’s completely melted. Voilà! Chocolate spread!

Can these cookies be made ahead of time?
You bet. This cookie dough can be made ahead of time and kept in the refrigerator for up to 4 days prior to baking. Make sure to cover tightly with plastic wrap so it doesn’t dry out. Let it sit out at room temperature for about 20-30 minutes before rolling and baking.
This recipe calls for a stand mixer. Can I also make this recipe by hand?
Yes. This recipe can easily be made by hand. However, keep in mind that this method will influence the overall time commitment. I recommend using a hand mixer if you don’t have a stand mixer.

Can I use a sugar substitute?
I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

Can I use a gluten-free flour?
I’m not sure just yet. I have been meaning to give this a try but haven’t had a chance. If you do try this, I would recommend using a 1:1 flour like this one as I don’t believe it would require additional ingredients that are typically called for when trying to make baked recipes in a gluten-free version. Please come back & tell me how it turned out.
Should I use light or dark brown sugar?
Since I make my own brown sugar, I use light brown sugar for almost all of my recipes. But light or dark brown sugar will work in this recipe.

HOW DO YOU MAKE S’MORES COOKIES?
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl, combine the butter, granulated sugar, and brown sugar.
- Once thoroughly combined, add eggs and vanilla extract, mixing for about 30 seconds.
- In a separate bowl, combine the flour, baking soda, and salt.
- Add the dry ingredients to the wet ingredients, mixing until combined.
- Fold in chocolate chips.
- Drop the cookie dough by the spoonful onto a greased or parchment-lined baking sheet.
- Bake for 10-12 minutes, until the edges have started to brown and cookies are cooked through.
- Remove from the oven and allow cookies to cool on a wire rack.
Assemble
- Once the cookies have cooled, spread a small amount of chocolate spread on the bottom of one cookie.
- Next, sprinkle about ¼ teaspoon of the graham cracker crumbs on top of the melted chocolate.
- On another cookie, spread a small amount of the marshmallow cream.
- Place the cookie with the marshmallow cream on top of the cookie with the chocolate spread and graham cracker crumbs, keeping the marshmallow, chocolate, and graham cracker crumbs in between the two cookies, creating a cookie sandwich.
- Repeat with all remaining cookies.
How do I properly measure the flour?
The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.
However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.

Can this recipe be doubled?
You can, and we do it often. It might take a bit longer to bake and assemble all of the additional cookies, but doubling works fine.
Can these cookie sandwiches be frozen?
You can bake the cookies ahead of time and freeze those. I don’t recommend freezing the cookies once they are assembled as the marshmallow cream doesn’t thaw too well.

You bet! If you have another favorite cookie – I definitely recommend mixing it up and using those to makes these s’mores cookie sandwiches. I would say that you should stick to a heartier cookie as the super-soft ones might not hold up to all the smooshing when biting into this S’mores Cookie Recipe.
