Anyone who knows me knows that I love a good queso dip. In fact, I’m such a fan of queso that I’ve even been known to be the one that will order it whenever it is on the menu, anywhere we go.
So when I decided to start making my own queso at home, I knew it had to be good. And let me tell you, this smoked queso dip is everything a queso lover could want.
It’s creamy, cheesy, and smokey—all the flavors you love in one delicious dip. Plus, it’s really easy to make so you can have a delicious party appetizer in no time!
What’s great about this queso is that you can prep it ahead of time and then pop it on the smoker when you are ready. Then just chill on the back deck, visit with your guests and this creamy, melty cheese dip will be ready before you know it.
If you are having a lot of people over, you might want to make a double batch. This never lasts long in our house.

How to Make Smoked Queso Dip
- Preheat the smoker to 230 degrees F.
- In a medium skillet, over medium heat on the stovetop, brown the sausage and diced onion, and drain any grease, if necessary.
- Add the cubed Velveeta cheese to a disposable aluminum foil pan.
- Add the browned sausage and onions mixture on top of the Velveeta cheese along with the diced tomatoes and chiles, shredded cheese, jalapeno slices, minced garlic, and heavy cream.
- Stir carefully to combine the ingredients.
- Place the pan on the smoker and cook for 30 to 40 minutes stirring every 10 minutes, until the cheese is completely melted and flavors are combined.
- Serve immediately with your favorite chips and vegetables for dipping.

To make smoked queso dip on a regular grill, you will need to purchase a smoker box. This is a small metal box that is designed to fit inside a standard grill.
It has holes in the bottom and sides so that smoke can escape. You will also need wood chips (such as hickory or mesquite) to fill the smoker box. Once you have these items, you can follow the same instructions as above for making smoked queso dip on a smoker.
Can I make smoked queso dip in the oven?
Yes, you can make smoked queso dip in the oven. Preheat your oven to 350 degrees Fahrenheit. You will basically be baking the queso instead of smoking it. Cook until melted.

- Get a nice bed of coals going on one side – you will use the other side for cooking.
