Who loves chilling out back with the family on the weekends? It’s one of my favorite things to do & one of the reasons I love summer so much. With the kids getting older, I cherish our time with them more & more. We like to take advanatage of the nice, late summer weather & head out to dine al fresco & have some family time. One thing that we almost always serve, easy snacks like this Slow Cooker Fiesta Cheese Dip.
Slow Cooker Fiesta Cheese Dip
I said it before, but I’ll say it again… We love snacks here in this house. We often times will put out a snack spread in place of a regular meal & let everyone graze while we enjoy each others company. Now that it’s nearly football season we have snack foods on our minds more than ever. Even though we are just now entering pre-season we couldn’t resist kicking things off with some appetizers to snack on while we relaxed in the yard. We love making cheese dips. I typically bake them in the cast iron skillet, but it’s way too hot to be doing that right now. So the next best thing is to make it in the slow cooker. It’s just as yummy & keeps the house cool.

Now a good cheese dip requires some equally good crackers. We LOVE pairing ours with these Breton Artisanal Cranberry and Ancient Grains crackers. With Breton’s variety of flavors and textures, there are endless ways to enjoy them for any occasion – from simple appetizers to a delicious crust, or simply eating them right out of the box, there’s a perfect Breton cracker for everyone. One of my favorite lunch ideas is having these crackers topped with salami & cheese. YUM!

Slow Cooker Fiesta Cheese Dip
Ingredients
- 1 8oz block cream cheese
- 1 15oz can black beans- drained & rinsed
- 5 cups fiesta blend shredded cheese- divided
- 1 taco seasoning packet
- 1-1/2 cups salsa
- Breton Artisanal Cranberry and Ancient Grains crackers for serving
Instructions
- Combine cream cheese, black beans, taco seasoning, salsa & 3 cups of the fiesta cheese in a small slow cooker - no need to stir yet
- Cover & cook on low for 30 minutes
- After 30 minutes, stir well, top with remaining cheese (don't stir in the additional cheese)
- Cover & cook another 30 minutes
- Remove lid, stir well & serve with Breton Artisanal Cranberry and Ancient Grains crackers for dipping
