I am a firm believer in simple should be just that, simple. Here I talk a lot about doing things quick & easy because who has a ton of time these days? I know I don’t & I’m sure you don’t either. So when I see meals that should be just that, but then they list a ton of ingredients & steps, I’m thinking “what- I don’t want to go through all that”. Which is why I created this blog. I love to share how quick & easy doesn’t mean you have to sacrifice on quality or flavor. This is especially true when it comes to casseroles or slow cooker recipes. To me, these should be what I call “dump & go” because the whole premise of these recipes is to free up time. If you do a ton of prep work in the beginning to save time later in the day- you are still putting in that same amount of time collectively.

When I create slow cooker recipes, 99% of the time it’s a toss it all in & let it be until everyone is begging for dinner. That’s exactly what you get with this Slow Cooker Fajita Chicken & Rice. When making this recipe I use leftover shredded chicken & white rice. You could use instant rice & rotisserie chicken to really speed the process if you didn’t have leftovers on hand. Whichever way you go with this- it’s quick. Sometimes we like to thin this out with additional chicken broth & make it into a soup. That would be great with a sandwich on the side. But when it’s thick & creamy like this, it’s the perfect comfort food for our cold North Idaho days. The cooler air is here for the long haul & I know we will be making this particular dish often & I hope you will too.

Slow Cooker Fajita Chicken & Rice
Ingredients
- 4 -6 cups shredded or rotisserie chicken
- 3-4 cups chicken stock depending on your desired thickness
- 2- 22 oz cans cream of chicken soup- condensed
- 3 tbsp minced onions
- 2 bell peppers- chopped
- salt pepper, granulated garlic to taste
- 1 1.12-Ounce packet Fajita seasoning
- white rice- cooked
Instructions
- Combine all ingredients in slow cooker & cover
- Cook on high 2-3 hours or on low 3-4 hours or until heated & flavors have blended
- Serve with a sprinkle of cheese or dollop of sour cream

I think we tossed in 3-4 cups. But you can use whatever leftovers you have. It doesn’t need to be exact.
