What Is A Beef Sirloin Tip?
Sirloin tip is a lean cut, a tougher cut of the hindquarters of the cow, that is good for slow cooking process in a crock pot, kabobs, shredded for sliders, etc.
In the store, you may see it labeled as round tip roast or knuckle roast.
Sirloin tip roast is leaner and more tender than top sirloin roast.
When cooked, sirloin tip roast is very flavorful but if not cooked through it will be tough. It relies on oils and butter during the cooking process to make it really tender.
Main Ingredients Notes
Roast
- Beef sirloin tip roast, I use 3-4 lb sirloin tip for this recipe. Slow-cooking beef gives the most amazing flavor and breaks down all the collagen.
- Olive oil. Instead of oil, you can salted or unsalted butter. Lean roast like sirloin tip roast needs some fats to perfectly cook and stay tender.
- Kosher salt and black pepper, to taste.
- Veggies: I use peeled and roughly chopped carrots, roughly chopped celery stalks, chopped or sliced onions, and minced garlic. Onion powder, onion box soup, and garlic powder are ok to use, but rich flavors come from fresh ingredients.
Cooking Sauce
- Beef broth or beef stock to use as a base for the sauce that our meat will be slowly cooking for hours.
- Optional, Red wine helps tenderize the meat and adds depth to the sauce.
- Worcestershire sauce is the main sauce for roasts and stews. Made of anchovies, salt, and tamarind, it adds that distinctive rich flavor to the pot roast.
- Soy sauce can also replace Worcestershire sauce. They both add rich umami flavor to the beef roast.
- Herbs: dried thyme, dried rosemary, bay leaves. If you can find fresh rosemary and fresh parsley.
- Optional, to thicken the liquid: cornstarch.

- Slow cooker. Alternative ways to cook this recipe: Dutch oven, Instant Pot, or oven-safe skillet.
- Skillet to sear the meat before slow cooking it.
How To Make Slow Cooker Sirloin Tip Roast
1 – Sear The Roast
Heat the olive oil in a large skillet over medium-high heat.
Season the beef roast generously with salt and pepper.
Sear the seasoned beef in the skillet on all sides until browned, about 4-5 minutes per side.
Searing creates a crust over the meat to keep all juices and liquids while it cooks in the crock pot.
2 – Slow Cook The Sirloin Tip Roast
Chop the veggies into relatively big 3-4 inch pieces, don’t be precise.
Combine the chopped carrots, celery, onion, and garlic in the bottom of the slow cooker insert. Lay the seared beef roast on top of the vegetables.
Pour the beef broth and red wine (if using) over the roast.
Add the Worcestershire sauce, soy sauce, thyme, rosemary, and bay leaves.
Cover and cook on low for 8 hours, or until the beef is tender and easily pulled with a fork. You can cook on high, but beef cooks evenly when it is slowly roasted.
- If you prefer a thicker gravy, whisk the cornstarch and water together in a small bowl to create a slurry.
About 30 minutes before serving, remove 1 cup of the cooking liquid and stir the slurry into it. Return the mixture to the slow cooker, stir, and continue cooking until thickened.
Allow the cooked meat to rest for 15 minutes before slicing.
Remove the bay leaves before serving.
Slice the roast and serve with the vegetables and sauce from the slow cooker.
Storing Leftovers
Leftover roast stores well in an airtight container in the refrigerator for 2-4 days. Reheat in a microwave, oven at 250F, or a saucepan.
You can use leftover beef for delicious sliders or shepherd’s pie, and leftover liquid from the pot for au jus.
You can also freeze leftover beef sirloin tip roast without vegetables and potatoes. Sirloin tip roast can be stored in the freezer for 1-2 months.
To reheat, first leave in the fridge to defrost overnight. Then reheat in a saucepan, with a little bit of beef broth, stirring for 3-4 minutes.
Make Ahead
You can marinate or season the beef sirloin tip 1-2 days in advance and store tightly wrapped in the fridge.
Take it out 1 hour before cooking.

This juicy sirloin tip roast goes well with staple sides like:
- Baby potatoes or mashed potatoes. Baby potatoes have very thin skin and they are perfect to throw into a slow cooker. Mashed potatoes mixed with bacon are a staple comfort food.
- Cranberry harvest salad,
- Green beans or asparagus for healthier sides or alongside potatoes.
- Favorite cheesecake for dessert.
Tips To Make The Best Slow Cooker Sirloin Tip Roast
- For heartier sauce, you can add tomato juice, tomato paste, or apple juice. They soften the meat and add amazing flavor. Watch out for the sugars in the recipe then, as many juices can have added sugar.
- The sauce should cover the bottom of the slow cooker completely but don’t drown the meat in it. The beef will naturally release juices too.
- Add vegetables. For a more comforting meal, you can cook the roast with Yukon gold or red potatoes. If cooking with vegetables, layer them at the bottom as they take the longest to cook. For more umami flavors, add mushrooms.
- For a Mexican-style roast, add some heat with cayenne and paprika.
- If there is any fat on your piece of meat do not trim it before cooking. It will provide needed fat for cooking and once the roast is done you can remove and discard it.
- This recipe works for an Instant Pot too (pressure cooking will only take 40 minutes for smaller pieces of meat). For my recipe, the instant pot cooking time will be around 2 hours.
- Red wine vinegar or balsamic vinegar are optional ingredients for the sauce. Vinegar highlights the sweetness and acidity of the sauce and balances the savory flavor. If you use balsamic vinegar you can skip the soy or Worcestershire sauces.
More Tips
- Once the meat is fork tender and you can easily pull it apart you can shred all the beef and keep cooking. It will ensure the meat is seasoned all the way through.
- Watch the internal temperature of the sirloin. For medium rare doneness, you need 130 degrees F, 140 degrees F for medium, and 150 – 155 degrees F for medium well. The super tender roast will have a temperature of 200℉. Bigger roast cooks longer, my 3 lbs can easily take 8-10 hours.
- Check the vegetables. If the meat is done but the veggies are still cooking, remove the meat and continue cooking the vegetables.
- Cooking in a slow cooker, make sure everything will fit in, especially if you plan a family dinner and want to cook meat and veggies in one pot.
- Cornstarch makes the sauce into a gravy, without it it will be more of a jus.
