How will I know the shrimp are done cooking?
The shrimp are ready to eat when they are firm to the touch and light pink in color. The best part about cooking seafood is that it cooks quickly and there are usually definite doneness indicators like color change so you know you are good to go.

What is the best way to store leftover shrimp fajitas?
Place any leftovers in an airtight container and keep refrigerated for up to 2 days. Reheat in the microwave for 60-90 seconds or until hot.

What kind of shrimp to use for fajitas?
First – always start with fresh, not frozen. Since the shrimp is the star of the show here you want to make sure that it is the best quality you can find. If you absolutely must use frozen, just make sure to thaw it completely first.
For size – I used 20-25 count shrimp. If you use another size, make sure to adjust the cooking time, if needed.

How can I keep this healthy?
Fortunately shrimp is already a better for you alternative than other traditional fajita ingredients. But with this recipe we are using a small amount of oil and we are baking the shrimp – which keeps the recipe as a whole lighter and healthier.
If you would like to use corn tortillas instead of flour and use a spray bottle of oil for a light mist instead of drizzling it – those swaps can make this recipe even lighter.

HOW DO YOU MAKE SHEET PAN SHRIMP FAJITAS?
- Preheat the oven to 425F.
- In a small bowl, combine the chili powder, cumin, paprika, garlic powder, and salt.
- Add the sliced peppers and onions to the sheet pan. Drizzle 1 tbsp of olive oil on the peppers and sprinkle half of the seasoning mix on top. Toss to combine.
- Place them in the preheated oven and roast for 10-12 minutes or until they start to caramelize around the edges.
- Push the vegetables to the sides of the sheet pan and add the shrimp in the middle. Drizzle the remaining tbsp of olive oil and sprinkle the remaining seasoning mix on top. Toss the shrimp and then lay them out in a single layer.
- Bake for an additional 10 minutes, or until the shrimp have fully cooked.
- Spoon onto tortillas and squeeze 1 lime wedge over each serving.
- Top with garnishes of your choice.
- Store in an airtight container in the fridge for up to two days.
