This recipe requires 4 main ingredients and your favorite seasonings to taste. Yep, it is that basic!
- Smoked sausage, sliced into rounds. You can also use Kielbasa sausage or even turkey sausage.
- Baby potatoes. Baby creamer potatoes work or any small potatoes with thin delicate skin. You can always mix different types of potatoes but watch out for cooking time. Young baby potatoes cook faster. No need to peel, just wash thoroughly.
- Green beans. I prefer using fresh green beans but you can use canned green beans or frozen green beans. Trim and snap in smaller bits if you want to have all three elements of the dish in one bite.
- Olive oil (or other vegetable oil)
- Aromatics and seasoning: garlic powder, onion powder, smoked paprika, salt, and black pepper to taste. I love using minced garlic and chopped onions instead of the powder too.

- Baking sheet (standard size) or baking dish (or you can make sausage green bean and potato casserole and use a casserole dish) greased with non-stick cooking spray.

How To Make Sausage Green Bean And Potato Sheet Pan
- Preheat the oven to 400 degrees F.
- Add sausage, trimmed and drained green beans, and potatoes in a large bowl.
- Pour the olive oil over the top and then add the garlic powder, onion powder, paprika, salt, and black pepper. Toss to make sure everything is evenly coated in all of the seasonings.
- Transfer to a prepared baking dish or sheet. Spread into an even layer.
- Bake for 35-40 minutes in the preheated oven. Stir halfway through. Cook until the potatoes are fork-tender and the sausage has browned.
- You can always garnish with chopped fresh cilantro or parsley right before serving.
Storage
Store leftovers of the sausage, green bean, and potatoes for 4-5 days in an airtight container in the fridge.
Freezing. Store in freezer-safe containers or covered with plastic wrap and a layer of aluminum foil for up to 2 months. To reheat thaw the green beans in the fridge overnight.
Reheat in the oven, microwave, or stovetop over medium heat until warm.
Substitutions & Variations
- Sausage substitutes: sausage Kielbasa, andouille sausage, turkey or chicken sausage, polish sausage, chorizo, or any sausages you like. Bacon fat drippings also can be a good fatty add-on.
- Serve with some garlic bread, alongside turkey, pork chops, or ribs, green salads, and other roasted veggies.
- Potatoes. If you want to use Russet potatoes, red potatoes, and big potatoes – just cut them into chunks. Actually, sweet potatoes will work too but the flavor will be a bit different as you can guess.
- Instead of olive oil, you can use melted butter. Melt butter in a frying pan or microwave-safe bowl. It adds tons of flavor to green bean casserole.
- Use any seasoning you love: red pepper flakes, cayenne pepper, Slap Ya Mama seasoning, creole seasoning, Italian seasoning, or even taco seasoning if you like the flavor. We really need to make well-seasoned potatoes to compliment the sausage flavor.
- Crockpot recipe. Load sausage, green bean, potatoes, and seasoning and cook for 4 hours on low. You can add a bit of beef or chicken broth for more flavor. I do recommend pre-cooking sausage with oil and a bit of seasoning in a pan over medium-high heat before putting it into the pot.
- Turn it into green bean potato casserole. You can also bulk it up with bell peppers, tomatoes, broccoli, Brussels sprouts, corn, yellow onion, yellow potatoes (Yukon gold potatoes), and other veggies.
Expert Tips
- To make tender veggies, cover the sheet with aluminum foil and bake the dish covered.
- To make evenly seasoned potatoes load them in a plastic bag with seasoning and toss well.
- If you add onions to the recipe (instead of using powder), make sure to cook them until they are translucent. You can also use them to precook the sausage but not add them to the bake if you or your family don’t eat onions.
- If after freezing the dish seems a bit dry, add a splash of chicken broth when reheating.
