I am obsessed with salted caramel. How about you? Do you love it? I can’t seem to get enough of it.
Whenever it’s an option, that’s my “go-to” flavor, especially this time of year. It seems to be everywhere & I’m quite happy about that. The salty sweetness just makes my heart sing. So it’s no surprise that I have been wanting to make just about everything with salted caramel.

For the longest time, I have been wanting to make a salted caramel sheet cake. I was trying to decide the best way to add that flavor directly to the cake batter & was perusing the aisles of the store for inspiration.
I thought about a flavored syrup but thought it might not make well. Then when I was picking up my coffee creamer I found a new flavor that was just perfect.
I used Salted Caramel Mocha creamer from International Delight in the cake to give it that great coffee house flavor I love. It was phenomenal!

I also used flaked sea salt along with the chopped pecans. I really wanted the salt to stand out with a cake as rich as this. It was perfect.
I ordered my salt online, but I’m sure you could find it in the specialty section of some grocery stores. If you can’t find it, coarse sea salt is perfect too.

This cake was every bit as divine as I imagined it would be. It’s definitely my new favorite sheet cake recipe. I can’t wait to make it again.

Can this be made with canned frosting?
Yes – that will work. I think there is caramel-flavored frosting available. But I don’t typically keep those in the house – and making my own was so simple, with just 2 ingredients.
How do you make salted caramel mocha sheet cake?
Cake
- Preheat the oven to 400 degrees.
- Line a 15×13 jelly roll pan with foil & spray lightly with cooking spray or an oil mister and set aside.
- In a large bowl, combine the flour, sugar & cinnamon – set aside.
- In a small saucepan, combine the water, butter, and shortening and cook over med-high heat until it comes to a boil.
- Remove & pour the mixture over the dry mixture – stir to fully combine.
- Mix in the buttermilk, baking soda, eggs & coffee creamer – in that order- stirring well in-between each one.
- Pour into the prepared pan.
- Bake for approx 20 minutes or until golden & the cake springs back when pressed lightly.
- Let the cake cool for 15-20 minutes while you make the frosting.
Frosting
- Combine the white chocolate chips and caramel flavored sweetened condensed milk in a medium saucepan & heat over medium until the chocolate is melted & the frosting is smooth.
- Pour the melted frosting over the cake & smooth it out into an even layer to cover.
- Sprinkle with chopped pecans & flaked sea salt before serving.

Can sheet cake be frozen?
Yes, I do it often. Once baked – this cake can be frozen at all stages of the creation process. I like to remove the freshly baked and cooled cakes from the pan, wrap them tightly in plastic wrap and freeze them for later use. (this is also handy when you want to work with cold cakes to keep the frosting from getting too soft.)
You can also gently wrap the completely decorated cake and freeze it until you need it. You will want to leave it in the pan – so make sure you have enough space in your freezer for this. Remember that the frosting won’t be completely firm and can still be dented if something gets pushed up against it while in the freezer.
Just make sure to thaw it in the fridge the night before as it does taste best when not frozen. I also like to leave it at room temperature for 30-60 minutes before serving so the frosting is more creamy than stiff.
