Tight on time in the evenings? Or maybe you just want to keep it simple when it comes to summer meal solutions? These Rotisserie Chicken Bacon Ranch Tacos are almost effortless to make with just a handful of ingredients & take less than 30 minutes. Perfect when the schedule is busy but you still want something POSITIVELY DELICIOUS!
You see, there are no lazy summer days here in our house. Our business is mostly seasonal & summer is when things really keep us on our toes. Add that to our homeschool schedule that runs on a calendar year & then the kid’s college classes, work schedules & extra activities & we have some incredibly full days around here. I need to keep things easy when it comes to dinner.
This Rotisserie Chicken Bacon Ranch Tacos recipe starts with Old El Paso Stand ‘N Stuff Shells & Old El Paso Traditional Refried Beans. I love the Stand ‘N Stuff Shells because they make assembling the tacos so easy & those beans are the perfect base to every taco.
Chicken Tacos
We love making this recipe for dinner because of how quickly we can get it all together. I can literally walk in the door with the ingredients in hand & have dinner on the table in less than 30 minutes. With as crazy as the schedule gets, I can’t beat that.
I like to make it even easier by placing my Walmart grocery order while I’m waiting for the kids & then pick it up on my way home. It really saves me a ton of time by not having to do all the shopping & going through the checkout line during the evening rush.
Here are some commonly asked questions
What is Rotisserie Chicken Bacon Ranch Tacos?
TThese Rotisserie Chicken Bacon Ranch Tacos are a chicken taco recipe made using rotisserie chicken mixed with the classic flavors of bacon & ranch & stuffed into Old El Paso Stand ‘N Stuff Shells along with Old El Paso Traditional Refried Beans & all the favorite taco toppings.
Can I make this without rotisserie chicken?
Yes, this can also be made with shredded chicken breasts, leftover chicken tenders or thighs. I just really love how easy it is to pick up 1-2 rotisserie chickens at the store & have pulled chicken that is hot & ready to enjoy for this meal. It cuts down on the prep time, which is a huge plus for me.
Why choose Old El Paso Stand ‘N Stuff Shells for this recipe?
Honestly, I just really love how easy they make dinnertime & they are so GOOD. I could easily spend a good 45 minutes just frying shells. That is a whole lot of time & don’t even get me started on the mess & the time it takes to clean it up. I would rather pick up these Old El Paso Stand ‘N Stuff Shells, which are great for stuffing with all our favorite taco ingredients, including Old El Paso Traditional Refried Beans & keep it simple & still scrumptious.
Can I make this recipe ahead of time?
You can make the chicken mixture ahead of time, but I don’t recommend storing the shells in the refrigerator. If you need to break up the prep time or you want to use the chicken mixture as leftovers for the next day, just keep the mixture refrigerated until ready to use. Then reheat for about 60-90 seconds in the microwave before adding to your taco shell.
HOW DO YOU MAKE Rotisserie Chicken Bacon Ranch Tacos?
- Preheat the oven to 400 degrees & spray a baking dish with olive oil or cooking spray. Set aside.
- Remove chicken from the bones & place in a large mixing bowl.
- Add dressing, bacon, parmesan cheese, diced green chilies & seasonings & stir to combine.
- Place empty taco shells into the prepared baking dish & place in preheated oven for 5 minutes. Remove.
- In a small saucepan, heat the beans until hot.
- Add 1-2 tbsp of Old El Paso Traditional Refried Beans to the bottom of each taco shell.
- Add the chicken mixture on top of the beans, filling almost to the top of the Old El Paso Stand ‘N stuff shell.
- Generously top with cheddar cheese.
- Bake for 7-10 minutes or until cheese is melted.
- Top with sour cream, fresh cilantro, tomatoes, olives & extra bacon before serving.
Why do the shells need to be baked first?
We like to keep the shells crispy on the bottom once we add all that delicious chicken bacon ranch mixture, which is pretty saucy. You don’t want the bottom of the taco to fall out & baking them first helps prevent that.
Where can I find all these ingredients for easy summer dinners?
Walmart is my one-stop-shop for all my dinner needs. I love the low-cost, all-in-one shopping solutions that definitely saves me time and money, not to mention that I can have them do my shopping for me, which is AWESOME.
