It’s FUDGE SEASON! This time of year it is all about FUDGE around here, and I couldn’t be happier. This time I whipped up one of my favorite varities, Rocky Road Fudge.

My mom was the fudge queen. Once this time of year would roll around, we would be making fudge every night until the wee hours of the morning. Everyone wanted a batch and she never turned them down.
She had a lot of different recipes for fudge, some very traditional, which required cooking on the stovetop and a candy thermometer. But she also had easy recipes like this one that take just 4 ingredients. So good!

Can I change the type of nuts in this recipe?
Of course. I have made this with pecans and almonds, both turned out absolutely delicious. I just really prefer walnuts when it comes to fudge, so that is what I use the most when it comes to this holiday treat.
Do I have to use milk chocolate chips?
While that tends to turn out the best due to the properties of milk chocolate compared to others like semi-sweet or dark chocolate, you can make this recipe with semi-sweet chocolate chips. Dark chocolate tends to not be creamy enough and will become dry and crumbly.
If you would like to make a dark chocolate variety, I would suggest doing a 50/50 blend of dark chocolate chips and milk chocolate. You’ll still get the dark chocolate flavor but retain the creminess you want in a fudge recipe.
HOW DO YOU MAKE Rocky Road Fudge
- Line an 8×8 pan with parchment paper.
- Combine chocolate chips and sweetened condensed milk into a microwave-safe bowl.
- Melt in the microwave.
- Fold in marshmallows and walnuts.
- Pour into prepared pan.
- Cool in the refrigerator & then cut into bite-sized pieces.

Rocky Road Fudge
Ingredients
- 3 cups milk chocolate chips
- 1 can sweetened condensed milk 14 ounces
- 2 cups mini marshmallows
- 1-1/2 cups roughly chopped walnuts
Instructions
- Line an 8x8 pan with parchment paper and spray lightly with cooking spray. Set aside.
- Combine chocolate chips and sweetened condensed milk into a microwave-safe bowl.
- Melt in the microwave in 30-second increments, stirring in between each increment.
- Once melted, fold in marshmallows and walnuts.
- Pour into prepared pan.
- Cool in the refrigerator for several hours and then cut into bite-sized pieces.
